What does managed security cover?

It is not a product you install and forget: it is a process that has to be looked after.
How often are backups verified?
Regularly, with real restore tests and with RTO and RPO set in the contract. Those are the two numbers that actually matter: how long it takes to be running again, and how much data is lost in the worst case. If a supplier will not state them, you are not buying business continuity.
What is a vulnerability assessment?
A periodic scan of network, endpoints and applications that looks for weak points before somebody else finds them. It produces a report with the vulnerabilities ranked by remediation priority, so the most exposed issues get fixed first.
How quickly do you respond to an incident?
SLAs are set by priority and critical incidents are handled within hours. Monitoring runs around the clock, with automatic alerts on anomalies, access attempts and changes in system state.
Does managed security make us GDPR compliant?
